Wheat Base Pizza
Pizzeria Practical Insightful Zesty Zealous Attentive, Yes you read it right, this is the long and stout full form of 'PIZZA'. Pizza, as we all are familiar with is a savory dish of Italian origin. It is a delightful amalgamation of flavours with different toppings like cheese, sausages, bell pepper, veggies, spices, herbs & is traditionally baked in a wood fired oven on high temperature. Pizza is sold fresh, either whole or in portions & is a common fast food item in Europe, Australia & North America & now a trendy no 1 fast food almost in every nook & corner. Today we are going to prepare healthy & easy 'PIZZA'. (on cheese you cheat for a day)

So, let's start the recipe.
Ingredients:
1) Wheat flour -2 cups
2) Curd (thick consistency)- 1 cup
3) Baking powder - 1 tablespoon
4) Salt - 1 tablespoon
5) Oil - 1-2 tablespoon
6) Grated mozzarella cheese as per required
7) Sugar - 1 teaspoon
8) Capsicum - 2
9) Onion - 1
10) Paneer (cottage cheese) - 1 cup
11) Chilly flakes - 1 teaspoon ( teaspoon)
Method :
1) Take a mixing bowl, add wheat flour to it & make a cavity at the Centre of the flour & add curd , baking powder, salt and sugar.
2) Mix the curd & other stuff put in it with a spoon till the curd effervesces (4-5 seconds)
3) Mix the flour & curd , knead well (add little water if required)
4) Apply oil to the dough & knead well again for 2-3 minutes
5) Let the dough rest for 30 minutes minimum & 2 hours maximum
6) Make balls of the dough( bigger than chapati balls)
7) Take a dough ball, dust some flour on it and roll to a thick medium size chapati (roll all dough balls similarly)
8) Place the rolled pizza base on non stick tawa /pan , let it cook for a while & then prick it with a fork only on the upper side.
9) Flip the base and let it cook on another side
10) Place pizza base on a tawa/pan(pricked part upside)
11) Apply pizza sauce on the pricked side (make sure to do the process on low flame)

12) spread mozzarella cheese
13) Place cube cut onion , capsicum, paneer & other veggies of your choice, top with mozzarella cheese
14)Sprinkle a pinch of chilly flakes, oregano(optional)
15) Cover the pan/tawa for 2-3 minutes, till the cheese melts( on low flame )
16) serve hot.
Tips:
1) Toppings can be added as per choice
2) 2 dough balls can be combined to make one pizza
3) Half maida (refined flour) and half wheat flour or only maida can be used to prepare pizza base
Note:
You can compromise a bit on consumption of cheese for a day.
