PIZZA SAUCE
Pizza sauce made with blanched tomatoes, blended with a harmony of herbs, is designed to meld with the dough and toppings under the high heat of an oven, creating a cohesive flavor. This thicker sauce prevents the dough from getting too soggy while the pizza cooks. Today, we are going to try a healthy version of homemade pizza sauce with ingredients easily procurable. This sauce gets ready within 30 minutes, right from washing and blanching the tomatoes, to storing the sauce in a container.

So let's start with the recipe.
Ingredients:
1) Tomatoes - 500 grams
2) Olive oil or sunflower oil - 4 tablespoon (use the oil that does not release its own taste)
3) Garlic - 10 cloves
4) Dried mixed herbs - 1 tablespoon
5) Chilly flake 1- tablespoon
6) Kashmiri red chilly powder - 1/4 tablespoon
7) Black pepper - 1/2 tablespoon
8) Oregano - 1 tablespoon
9) Sugar - 1 tablespoon
10) Salt - according to taste
Method:
1) Make slits on tomatoes & put them into boiling water.
2) Let the tomatoes boil for 2-3, off the flame and let the tomatoes cool & peel off the skin of the tomatoes.
3) Roughly chop & grind them (take care it does not make a paste. You should feel chunks in it)
4) Add oil to a pan, add fine chopped cloves to it & fry on low flame for a minute.
5) Add chilly flakes, Kashmiri red chilly powder and give a stir. Add the ground tomatoes and cook on low flame by adding salt, sugar & black pepper powder.
6) Cook for 10-15 minutes on low flame.
7) Cool it, store in a glass container & refrigerate.
NOTE :
1) You can add oregano to this sauce. (optional)
2) Fine cut onion can also be added along with garlic cloves. (optional)

TIP : 1/2 teaspoon vinegar can also be added to the sauce, after turning off the flame for longer shelf life.
