SPINE GOURD FRY / KANTOLA FRY

In today's recipe we are going to try out kantola/ spine gourd fry. Even though this vegetable is spiky and pricky in looks it has endless amount of health benefits . It is low in calories and does not carry its particular taste. It is an easy digestion vegetable and eliminates constipation. Kantola has high water content and so is beneficial if you are trying to lose weight. Try to consume this seasonal high demand vegetable whenever available. Though it does not carry its own taste let's try to make it flavourful and delicious with the help of our spice box.

INGREDIENTS :
1) Spine gourd / kantola - 3-4 ( big size)
2) Semolina/ rava - 5-6 tablespoon
3) Red chilly powder - 1 1/2 tablespoon or as per your taste
4) Turmeric powder - 1 teaspoon
5) Pepper powder - a pinch
6) Cumin powder - a pinch
7) Dry coriander seeds powder - a pinch
8) Salt as per taste
9) Oil to shallow fry

METHOD :
1) Wash the spine gourd/ kantola thoroughly, preferably once in salt water and once in normal water.
2) Slice the kantolas in round shape ( as shown in the picture).


3) Take semolina/rava in a plate add all the spice powders mentioned in the ingredients to the semolina.
4) mix the semolina and all the spice powder.


5) If you feel the kantolas are dry just sprinkle little water on it , so that the semolina gets well coated on the kantola.
6) Coat the kantolas with the semolina.
7) Apply oil to a pan or tava , place the semolina coated kantola on the tava (pan).
8) Add oil according to the requirement.
9) fry kantola /spine gourd on both the sides well on low to medium flame.


10) serve them hot.


NOTE :
1) Kantola /spine gourd fry goes well with daal rice, sambar rice and any other curry rice.
2) It also goes well as a starter.
