SIMPLE MASALA DAAL KHICHADI ( SPICED LENTIL RICE )

Today I am going to prepare hotel style ' MASALA DAAL KHICHADI ' of my version . A khichadi that is an harmonious amalgamation of rice, daal, spices and herbs. This khichadi is a myriad one pot meal that was been prepared in our traditional kitchens and now has taken a form of modern variations. ' KHICHADI ' is an absolute wholesome meal , simple and digestable food packed with proteins that proves a comfort food for the toddlers , the sick , and the adults. This khichadi is a main course meal and there is no need for a side dish with this khichadi , only a dollop of ghee topped on it will take care of everything , or else a papad or some pickle also goes well as accompaniment. My paternal grandmother ( ' Aaaye ' as we would call her ) had her own simple version of preparing khichadi with coconut chutney as accompaniment. The chutney was ground by her on grindstone ( pata varvanta in marathi ) and that flavourful chutney along with khichadi just tasted awesome. My 'Aaaye's recipe of khichadi and chutney I will share sometimes else . For today , let's see my version of ' MASALA DAAL KHICHADI '. Let's start.

INGREDIENTS :
1) Rice - Basmati rice 1 cup ( you can use any rice of your choice )
2) Pigeon pes lentil ( toor daal ) - 1 cup
3) Split green gram ( moong daal ) - 1/2 cup


4) Turmeric powder - 1/2 teaspoon
5) Oil
6) Ghee
7) Salt

FOR TEMPERING :
1) Onion - 2 medium sized
2) Tomato - 1 small sized
3) Fresh coriander - (1/2 cup ) about 5 strands fine cut
4) Garlic - 1 tablespoon fine cut
5) Ginger - 1 tablespoon long cut
6) Green chilly - 2 long cut


7) Mustard seeds - 1 teaspoon
8) Cumin seeds - 1 teaspoon
9) Asafoetida - 1/4 teaspoon
10) Coriander seeds powder - 1/2 teaspoon
11) Cumin seeds powder - 1/2 teaspoon
12) Dry red chilly - 3-4 small size
13) Curry leaves - 2 strands



METHOD :
1) Add split pigeon pea , split green gram , turmeric powder and about a teaspoon of oil to a cooker , add sufficient water and cook till 3 whistles.


2) Meanwhile, cook rice in a separate vessel
3) Take a kadaee, put it on flame, add oil and ghee to it in equal quantity
4) Add mustard seeds , cumin seeds , curry leaves , green chillies, red chillies , asafoetida and saute well.


5) Add garlic , onion , fry till onion turns pink in colour
6) Add ginger saute for half a minute, add tomatoes and saute again
7) Add coriander and cumin powder , add fine cut fresh coriander ( reserve some fresh coriander to garnish ) saute for a minute.


8) Add cooked daal and salt


9) Add cooked rice , mix well add water to make the khichadi a semi liquid


10) Cook the khichadi on medium flame for 5 minutes , garnish with coriander leaves.


11) Serve hot with a dollop of ghee
