Red Pumpkin Bhaji/Sabzi

Pumpkin bhaji is an Indian dish prepared with minimum spices making it mildly hot and flavourful. It leaves you feeling full for longer because of its fiber content. it goes well with chapati and phulka and also with dal and rice.

So, let's start with the recipe.

Ingredients:

1) Pumpkin (skin removed & cut into cubes) - 200 grams

2) Oil - 1 tablespoon

3) Jeera - 1/4 cup

4) Chopped onion - 1

5) Asafetida(Hing) - A pinch

6) Coconut (Scraped) - 1/4 Cup


7) Green chillies - 1-2

8) Curry leaves - 5-6 leaves

9) Mustard seeds - 1 Teaspoon

10) Salt - As per taste

11) Fresh coriander leaves - To Garnish

Method:

1) Add oil to the pan. Add Mustard Seeds and let them crackle. Then add cumin seeds (Jeera), Curry leaves and chopped Green Chillies & stir fry for a few seconds.

2) Add Chopped Onion & let it fry until it gets moist.

3) Add Asafetida (Hing)

4) Add Pumpkin cubes & mix well. Add water to cook. Place a lid on the pan & let the pumpkins cook until soft. ( 10-12 minutes)

5) Once the pumpkin is cooked, add salt and scraped coconut to it. Garnish the dish with fresh coriander & serve hot.

NOTE : This pumpkin bhaji/ sabji can also be prepared in a satvik way without adding onion or garlic to it.
