Curry Leaves Chutney

Curry leaves are a vital component of Indian cuisine & traditional medicine. Native to India, Curry leaves are glossy, pointy & almond shaped. It finds a pride place in Indian Ayurveda, referred as 'Krishnanimba'. Curry leaves when combined with onion, lentils & other spices makes a nutritious & aromatic chutney. When added some ghee, it goes well with Chappati, Phulka, Bhakri or Roti. When Curry leaves Chutney combined with rice & topped with a dollop of Ghee, makes a good savoury.

There are varieties of Curry leaves Chutney. But today, we will try out this simple one!

Ingredients:
1) Curry leaves - 2 cup
2) Dry red chilly - 2-4(Adjust according to your preference)
3) Garlic - 10-12 cloves


4) White sesame - 1 tablespoon
5) Chana daal (split chickpea lentils) - 1 tablespoon
6) Peanuts - 2 tablespoon
7) Onion - 1/2 cup

8) Jeera - 1 teaspoon
9) Fresh coriander(finely chopped) - 1/2 cup

10) Salt - taste
11) Oil

Method:
1) Chop the curry leaves into fine pieces
2) Chop the onion.
3) Wash & chop the coriander leaves finely.
4) Make coarse paste of dry red chilies & garlic cloves. (Can use mortar and pestle)
5) Dry roast the peanuts, sesame seeds & split chickpeas. Roast all separately.
6) Add oil to a kadhai or pan, add jeera to the oil and let it crackle.
7) Add onion and fry for 15-20 seconds on medium flame
8) Add chilly, garlic paste and fry well for a minute
9) Add curry leaves fry for 2 minutes
10) Add roasted sesame seeds and coarse crush of peanuts and chickpeas , add coriander leaves
and mix well add salt cook for a minute and serve.
