Cucumber Pacchadi/ Raita

Today's recipe is cucumber Pachadi. When you can't think of anything else to make in minutes, this Cucumber Pacchadi is the right recipe you can think of preparing. The combination of fresh Cucumber, Coconut & Yogurt ot Buttermilk used in this Pacchadi gives a cooling effect to the body. It goes well with the meals as side dish especially with Sambhar Rice. This can be served almost on all occasions and also can be offered to god in Naivedya platter. This South Karnataka, Kerala recipe is a must try.

So why not treat your family with this toothsome Pacchadi?

Ingredients:
1) Cucumber (Grated) - 3/4 Cup
2) Coconut (Scraped) - 1/2 Cup
3) Green chilli - 1 small size
4) Water - 1/4 cup
5) Curd - 1 cup or Buttermilk - 1/2 cup
6) Mustard seeds - 1/4 teaspoon


Tempering:
1) Coconut Oil - 1 tablespoon
2) Mustard seeds - 1/4 teaspoon
3) Dry red chilli - 1
4) Curry leaves - 5/6 leaves

Method:
1) Add grated cucumber to a mixing bowl.
2) Add scraped coconut, mustard seeds, green chilly, water and grind it to a paste.
3)Add the groung paste to the cucmber.
4) Add salt to it & mix well.
5) Add 1/2 cup buttermilk or 1 cup curd to this paste & mix it well.
6) In coconut oil temper mustard seeds, dry red chilly and curry leaves & pour it on the cucumber and coconut mixture.
7) Mix well while serving.
